Spinach Roulade with Cream Cheese Filling

This is an unusual vegetarian meal, quite rich and delicious. It mixes cream cheese with hard boiled eggs and a spinach roulade.

Preparation Time: 25 minutes
Cooking Time: 20 minutes
Serves: 4 - 6

Ingredients
500 g frozen or 1 kg fresh spinach - 350 g after cooking and draining
3 tbsp yogurt
¼ tsp ground nutmeg
4 large eggs -separated
1½ cups or 350 g cream cheese
½ tsp garlic powder
2 tbsp mixed herbs, finely chopped
4 tbsp yogurt
2 hardboiled eggs, finely chopped

Method
  • Line a swiss roll tin -33 cm x 23 cms with baking paper.

  • Cook the spinach and squeeze out as much moisture as possible. Chop finely by hand or you could use a processor.

  • Add the yogurt, seasonings, nutmeg and egg yolks until smooth.

  • Beat the egg whites until very stiff. Add 2 tbsp of the whites into the spinach mixture, and then carefully fold in the remainder.


  • Pour into the pan and spread out evenly.

  • Cook at 200°/180° fan forced for about 15 minutes until set.

  • Meanwhile, combine all the remaining ingredients for the filling and add some salt and pepper to taste.


  • Turn the roulade onto a sheet of baking paper and peel off the baking paper.

  • Spread the cheese mixture over it quickly.


  • Roll it up carefully using the baking paper.


  • Transfer back to the baking tin on the baking paper and heat for a few minutes.

  • Cut into slices and serve.
