Spinach &Three Cheese Top Slit Chicken

I often stuff chicken breasts with all kinds of fillings and usually wrap them in bacon to stop the filling falling out. Then I came across a simple technique where you score across the top of the chicken. You get lots more filling in and it doesn't go all over the place.

You could try any filling you like but this one of three cheeses and spinach is particularly tasty.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 2

2 large chicken breasts (or 3 smaller one)
2 large handfuls fresh spinach
Dash of olive oil
1/2 tsp chilli flakes
2 tsp paprika
100g goats cheese
75g grated cheddar
25g grated parmesan

Preheat the oven to 180c fan.
Heat the olive oil in a large saucepan and then add the spinach and allow to just wilt and no more.
Crumble in the goats cheese and mix through until it has melted.

Add in the chilli flakes.

On a baking tray, slit the chicken breasts across the top, 2-3 cm apart. Don't cut all the way through the chicken, just 3/4 of the way down.

Stuff the spinach and goats cheese well into each slit.
Sprinkle over a little paprika.
Finally mix the cheddar and parmesan together and sprinkle over the chicken breasts.

Place in the oven and bake for around 25 minutes until cooked through.
