Spring Potato Salad
New potatoes are so quick and easy to prepare. While they are lovely with butter and some mint, this salad is another way to enjoy them. Plain mayonnaise is a little bit boring, whilst raw white onion is quite strong: spring onions (or scallion, as they are sometimes known) are a good way to bridge the divide between plain and flavoursome.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
300g new potatoes
1 bundle spring onions
3 tbsp mayonnaise
Method
Bring water to boil in a large pan.
Scrub the new potatoes. You don't need to peel them - the skins taste delicious when they are young - so this is just to make sure they are clean.
Add the potatoes to the pan and boil for about 20 minutes, until tender.
Meanwhile, clean and trim the spring onions.
Finely chop the spring onions, and set aside.
When the potatoes are ready, drain them and leave them to cool.
When cooled, put into a large bowl and then add the spring onions.
Add the mayonnaise and mix well.
Cover and store in the fridge until ready to serve.
