Squid with Dill and Garlic Red Sauce

If you're an avid seafood fan, then you must try this delicious Mediterranean squid dish. Using fresh squid from Cappo seafood, good quality tomato paste and fresh herbs, to create a unique flavoured meal for any day of the week.

Preparation Time: 10- 15 minutes.
Cooking Time: 10 Minutes for the squid.
Makes: 4 servings.

Ingredients
1/2 Onion
2 garlic cloves
1 kilo of squid tentacles
1 jar of good quality tomato paste 700g
Bunch of dill, finely chopped
1/4 cup extra virgin olive oil

Method
  • Finely chop the onion, garlic and dill and saute the onion and garlic with the olive oil on low heat. Leave dill for the end.



  • Whilst the onion and garlic are cooking slowly, rinse the squid under cool water and drain - removing excess liquid.

  • Add the squid to the pan and saute for a minute on medium heat. Mixing it around with the onion and garlic.



  • Add the tomato paste to the mixture and the chopped dill, mix this through for 3-5 minutes or until squid looks tender being careful to not overcook. Squid at times can take only 2 minutes to cook. 5 minutes was enough for me.



  • Season with salt and pepper and serve with a side of your choice - Potatoes, rice or both.
