Squidgy Toffee Balls

These delicious, squishy toffee balls will be popular with children and adults alike. The key to making them is to keep stirring - this will stop from them from burning.

Preparation Time: 5 minutes
Cooking Time: 1 hour (varies)
Makes: 20 servings (you can double the quantities to make even more)

Ingredients
1 tin of condensed milk
2 tbsp Demerara sugar
2 tbsp golden syrup
30 g butter



Method
  • Put the butter, sugar, and syrup into a large heavy-bottomed saucepan and stir over a low heat until the sugar is dissolved.



  • Add the condensed milk, and contine to stir.




  • Cook over a low heat for 20 to 30 minutes, stirring constantly (or the mixture will burn).



  • The mixture should slowly get thicker and darker as the cooking time goes on.



  • Once the mixture looks a really deep golden-brown remove from the heat.



  • Cover a large tray with non-stick baking parchment.
  • Using two teaspoons, spoon out tea-spoon sized blobs of the mixture onto the tray.



  • Leave to get completely cold, and then roll between your hands to turn into round balls.



  • If the mixture doesn't maintain its shape in the balls, then you haven't cooked it for long enough. Return to the pan and cook until it does maintain shape.
  • Wrap the balls in shiny foil, or pop them each in a petit fours case.
