Steak Sauce 1 Café De Paris Butter
We are always searching for a sauce or topping for grilled or barbequed steak. Here is one of my favourites, Café de Paris butter.
It is very robust, smokey and flavoursome that can also be used on chicken and seafood or even broccoli.

Makes: 15 servings
Ingredients
250g butter (softened)
1 tbsp olive oil
1 tbsp tomato paste
2 tsp French mustard
10 -12 olives
3 anchovy fillets
1 tsp capers
1/2 tsp curry powder (Keen's)
1/2 tsp smoked paprika
2 cloves garlic
1 tbsp parsley (chopped)
1 1/2 tsp tarragon
Lemon juice (to taste)
Black pepper (to taste)
Tabasco sauce (to taste)
Method
Place all the ingredients in a food processor except the butter, lemon juice, pepper and Tabasco.
Turn on the processor and start to puree. Slowly add the butter in small pieces until combined. You will need to scrape down the sides of the bowl occasionally.
When the butter is well mixed add the remaining ingredients to taste.
When you are happy with the flavour place the butter along greaseproof paper.
Roll the butter into a log shape, roll this into aluminium foil and refrigerate until firm.
Once firm slice the butter into pieces and place in the fridge for a week or two or place in the freezer.
To serve, remove from the fridge and allow to reach room temperature before placing on top of steak etc.
