Steak Sauce 2 Mushroom Sauce
Simple but full of flavour, this sauce gets its depth by reducing the stock with the mushrooms and red wine.

Cooking Time: 18 minutes
Makes:2 servings
Ingredients
1 Portobello mushroom
300ml beef stock
50 ml red wine
30 ml Cream
Salt and freshly ground black pepper (to taste)
Method
Slice mushroom.
Place a little oil in a pan, sauté mushroom gently for a few minutes.
Add red wine and reduce by half.
Add stock and continue to simmer until the sauce reduces and thickens slightly.
Add cream and black pepper and keep reducing slowly.
Correct seasoning and consistency, the sauce should be thick enough to cling to a spoon but not a glaze, and serve.
