Steamed Chicken with Orange and Mint

This is a delicious alternative to frying, roasting or baking chicken. I like to steam the meat because it keeps it moist, but also the seasoning stays fresh and the chicken stays well flavoured. Steaming is also a healthier alternative to other cooking methods.



Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 1 serving

Ingredients
1 chicken leg
2 satsuma/1 orange
6 fresh mint leaves
5 thyme sprigs
Half tsp black pepper
Splash olive oil

Required seasoning


Method
  • Place the chicken in a sieve on top of a saucepan of boiling water and boil for 15 minutes.



  • Slice the satsumas/orange in half.



  • I ate the segments, but if you'd like to keep the oranges in tact feel free. Add to the saucepan of chicken along with all the seasoning.



  • Cover the saucepan with a lid on turn to a simmer for 30 minutes.

  • Remove the lid, and the meat should be cooked through completely, the oranges slightly softened, and the mint wilted.



  • Serve alongside roasted tomatoes and wilted spinach for a healthy dinner.



  • Triple amounts to feed a family of three.
