This simple Chinese dish is comforting and delicious. It is so good with steamed jasmine rice.

Makes: 4 servings
Ingredients
300g pork mince
1 bunch asparagus, cut into 1/2 cm pieces
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon Shao Xing Cooking Wine
few dashes white pepper powder
2 cloves garlic, minced
For the Egg Custard
6 eggs
1 1/2 cups water
1 tablespoon soy sauce
steamed jasmine rice, to serve
Method
Marinade the pork mince with the soy sauce, sesame oil, Shao Xing cooking wine and white pepper powder for 10 minutes.
Break the eggs into a bowl and whisk with a fork. Pour in the water and soy sauce. Mix well and set aside.
Heat 1 tablespoon of vegetable oil in a saucepan. Add in the garlic and fry until golden brown and fragrant.
Add in marinated pork mince and stir fry until they are no longer pink, breaking them to smaller bits with wooden spoon.
Add in the asparagus pieces and stir fry together with the pork mince until they are tender but still crunchy.
In a shallow dish, arrange the stir-fried minced pork in a layer.
Gently pour the egg custard mixture through a fine sieve.
Break any air bubbles with the back of a spoon.
Cover the dish with aluminium foil.
Steam over high heat for 15 minutes.
Serve over steamed jasmine rice.
