Steamed Egg Custard with Minced Pork & Shiitake Mushrooms

Silky egg custard steamed on top of marinated pork mince and shiitake mushrooms.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

4 eggs
3 cups water
250g pork mince
6 dried shiitake mushrooms
1 spring onion, chopped
salt and white pepper powder, to taste
steamed jasmine rice, to serve

1 tsp salt
1 tsp sugar
1 tsp white pepper
1 tbs cornflour
1 tbs soy sauce
1 tbs sesame oil

Soak the shiitake mushrooms in hot water for 15 minutes until soft. Drain and squeeze out excess water, cut off the stems and finely chopped the caps.

Mix the chopped mushrooms with pork mince and all the marinade ingredients in a bowl. Mix well to combine. Cover and leave to marinate for 10 minutes.

Use a chopstick, gently beat the eggs in the water until combined.

Spread the marinated pork mixture onto a steaming dish. Pour in the beaten egg mixture over the pork mixture.

Season with salt and white pepper powder. Scatter the chopped spring onions over the egg mixture.

Steam on high heat for 15 minutes until the pork has cooked and egg has set.

Carefully remove from the steamer. Serve immediately with steamed jasmine rice.
