Steamed Ginger Chicken with Chinese Sausage Black Fungus

Ginger infused silky chicken slices steamed with chinese sausages and crunchy black fungus.



Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
4 chicken thigh fillets, thinly sliced
4 dried black fungus
2 chinese sausages (lap cheong), thinly sliced in an angle

Marinade
7 slices ginger
1 tsp sesame oil
1 tsp sugar
1/2 tsp salt
2 tbsp cornstarch
2 tbsp water
1 tbsp shaoxing rice wine
a dash of white pepper powder

Method
  • In a bowl, mix all the marinade ingredients with the chicken slices. Cover and leave to marinade for 20 minutes.



  • Soak the dried black fungus in a bowl of water for 10 minutes. Drain and roughly chop.



  • Arrange the marinated chicken on a heatproof dish, top with chinese sausages and black fungus. Steam in a pot of boiling water for 30 minutes until cooked through.



  • Remove from the heat and serve immediately.
