Steamed Oysters with Different Sauces

Delicious entree. Different sauces, different flavours.



Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 6 servings with 4 different flavours.

Ingredients
6 fresh big oysters
2 tsp Cantonese XO sauce
2 tsp finely diced ginger
2 tsp sliced green spring onion
2 tsp finely diced garlic
Half small red chilli, sliced
3 tbsp steam fish soy sauce

Method
  • Clean oysters properly, remove excess water
  • Put 1 tsp XO sauce on an oyster, so 2 oysters have XO sauce
  • Put 1 tsp finely diced ginger and 1 tsp sliced spring onion on an oyster, so 2 oysters have both ginger & spring onion sauce
  • Put 1 tsp finely diced garlic on an oyster, so 2 oysters have garlic sauce.
  • Put sliced red chilli to an oyster which has garlic sauce already. So one oyster has garlic plus chilli sauce, one has garlic sauce only.
  • Finally, put 1/2 tbsp steam fish soy sauce on each oyster, so each oyster has soy sauce added.
  • Fill water to a large steamer/wok to the level just below the bottom of steamer basket.
  • When water starts to boil, place all oysters into steamer basket, cover with lid, steam for 5 minutes, then serve.
