Steamed Oysters with Different Sauces
Delicious entree. Different sauces, different flavours.

Cooking Time: 10 minutes
Makes: 6 servings with 4 different flavours.
Ingredients
6 fresh big oysters
2 tsp Cantonese XO sauce
2 tsp finely diced ginger
2 tsp sliced green spring onion
2 tsp finely diced garlic
Half small red chilli, sliced
3 tbsp steam fish soy sauce
Method
Clean oysters properly, remove excess water
Put 1 tsp XO sauce on an oyster, so 2 oysters have XO sauce
Put 1 tsp finely diced ginger and 1 tsp sliced spring onion on an oyster, so 2 oysters have both ginger & spring onion sauce
Put 1 tsp finely diced garlic on an oyster, so 2 oysters have garlic sauce.
Put sliced red chilli to an oyster which has garlic sauce already. So one oyster has garlic plus chilli sauce, one has garlic sauce only.
Finally, put 1/2 tbsp steam fish soy sauce on each oyster, so each oyster has soy sauce added.
Fill water to a large steamer/wok to the level just below the bottom of steamer basket.
When water starts to boil, place all oysters into steamer basket, cover with lid, steam for 5 minutes, then serve.
