Sticky Curry Cous Cous

A filling meal that can be easily shared around the dinner table; it is delicious both warm and cold.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 5 servings

Ingredients
240g giant couscous
200g sweet potato
60g peas
10g sunflower seeds
400ml tinned curry soup (thin and smooth, not thick or chunky)
1 tbsp nori flakes
1 tsp curry powder
1 tbsp coconut oil

Method



  • Bring the soup to the boil in a saucepan, then stir in the couscous and simmer until all the liquid has been absorbed.



  • Chop the sweet potato and fry in coconut oil until it is soft enough to pierce a knife through.



  • Stir in the remaining ingredients and fry for a few more minutes until the peas are cooked.



  • Mix into the couscous and serve.
