Sticky Date Pudding with Butterscotch Sauce
With the autumn weather taking hold and the winter weather creeping closer, this is a warming dessert perfect for those cozy nights at home. Whether you're entertaining or just having a night in, this sticky date pudding is amazing even when re-heated in the microwave.

Makes: 12 servings
Ingredients
Pudding
340g dried dates, pitted
2 teaspoons bicarbonate soda
500ml water
120g margarine
340g brown sugar
4 eggs, lightly beaten
1 teaspoon vanilla extract
340g self raising flour
Sauce
1 cup brown sugar
300ml cream
60g butter
1 teaspoon vanilla exract
Method
Pudding
Preheat oven to 150 degrees C. Grease a 9x13 inch pan.
Cut dates into small pieces, roughly 1x1cm.
Bring dates, bicarbonate of soda and water to the boil in a large saucepan.
Reduce heat and allow to simmer. Stir continuously until dates begin to break apart, then remove from heat and allow to cool slightly.
Stir in margarine until melted.
Add brown sugar, eggs and vanilla extract and stir until combined.
Whisk in sifted flour until just combined.
Pour into prepared pan and bake for 60 minutes.
Sauce
Place all ingredients into a saucepan and combine over medium-high heat.
Reduce heat and simmer uncovered until thickened and golden in colour.
To Assemble
Allow pudding to cool slightly before serving. Pour warm butterscotch sauce onto individual slices and allow to soak in slightly.
Alternatively, store pudding and sauce separately in airtight containers in the fridge. For quick and easy dessert or entertainment, heat pudding and sauce separately in the microwave before serving.
