Don't you just love the word 'sticky'? Put it in front of a type of food, and it is instantly more delicious - Sticky BBQ Ribs, Sticky Toffee Pudding, and here we have Sticky Pistachio Cake. All of which results in sticky fingers, so with napkins at the ready, get stuck it.

Makes: 24 servings
Ingredients
200g shelled pistachios
280g wholemeal plain flour
140g margarine
140g condensed milk
1tsp baking powder
1tsp bicarbonate of soda
3 oranges
1 lemon
2tsp Truvia sweetener (or 100g caster sugar)
100g icing sugar
2 eggs
Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Cream together the margarine with the condensed milk.
Blitz the pistachios in a food process, and then stir in 150g.
Mix the flour with the bicarbonate of soda and baking powder, then fold in.
Zest and juice the oranges and lemon.
Stir in ¼ of the juice and ½ the zest.
Divide the mixture into two baking trays.
Heat ½ the juice with sweetener/sugar in a saucepan until dissolved.
Poke holes in the top of each cake and then pour the syrup over the top.
Mix the remaining pistachios, zest, juice, and icing sugar together.
Spread over the cake and cut into squares.
