Sticky Pulled Pork

When you make this recipe you will wonder why you haven't made it before. This is finger licking good and the finished product is so versatile.

Preparation Time: 5 minutes
Cooking Time: 4.5 hours
Makes: 8 servings

1.5kgs pork (any cut)
2 cans of coke or pepsi
500ml bbq sauce

Cut the pork into medium sized pieces.
Put the pork into a large pot and cover with the coke and bbq sauce.

Allow to simmer on a low heat, occasionally stirring and checking to break the pieces of pork into smaller parts.

As the sauce thickens you may like to add more coke.
After about 3.5 hours of cooking, get two forks and start to shred the meat.
When the sauce is completely reduced, shred the remaining meat and season with pepper and salt.
Serve on a roll with coleslaw or on a bed of rice.
