Sticky Rice Smoked Mackerel Gratin

Full of flavour, this sticky rice and smoked mackerel gratin tastes indulgent, but is also packed with omega 3, making it a healthy and delicious meal.

Preparation Time: 50 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
25g wholemeal plain flour
25g margarine
25g grated parmesan
25g red leicester
4 smoked mackerel fillets
700ml almond milk
1 bay leaf
2 eggs
3 spring onions
1 lemon
30g watercress
40g wholemeal bread
225g jasmine rice

Method
  • Boil the rice in 500ml almond milk until the liquid is completely absorbed, and then place in an oven dish.



  • Fry the mackerel in 200ml almond milk with a bay leaf for two minutes.



  • Flake the mackerel, mix it with watercress, and then place on top of the rice.
  • Discard the bay leaf and pour the milk into a jug.
  • Heat the margarine and flour in a saucepan and stir until it forms a ball.
  • Take it off the heat and then gradually stir in the milk.
  • Return to the heat until it forms a thick smooth sauce.
  • Beat the eggs, and then gradually stir in the sauce.



  • Chop the spring onions and stir into the sauce.



  • Pour the sauce over the mackerel.
  • Grate the red leicester and sprinkle over the top.
  • Preheat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.



  • Turn the bread into breadcrumbs, and mix with parmesan.



  • Zest the lemon and mix the zest into the breadcrumbs before sprinkling over the mackerel.
  • Squeeze the lemon juice of the top.



  • Bake in the oven for 20 minutes.
