I am a big fan of sticky date pudding and salted caramel so by default anything the tastes like either is a win to me. This sticky caramel porridge recipe is so delicious, warming and rich that it's hard to believe it's all natural. This is my new favorite winter breakfast and I hope you enjoy it too.
Preparation Time: 5 minutes
Cooking Time: 3 minutes
Makes: 1 serving
Ingredients
2 medjool dates or 5 dries dates
1 tbsp
walnut butter (or any nut butter)
1 tsp. coconut oil melted (optional)
1/4 tsp. vanilla extract
1/4 tsp. cinnamon
1/2 cup oats
1/8 tsp. flaked salt
3/4 cup of water
Method
In a blender, add the all ingredients except oats, and blitz until it forms a smooth caramel paste.
Cook your oats on a stove top with 3/4 cup of water.
Add you caramel mixture to the cooked oats and stir until warm.
Top with extra nuts and dates if desired and dig in!
This can be made a day ahead and heated up the next morning. Great for taking to the office!
