Stir Fried Rice
Leftover rice, veggies and chicken or shrimp, are combined together to make a flavour packed and colourful dish.
Preparation Time: 2-3 minutes
Cooking Time: 2-3 minutes
Makes: 6-8 servings
Ingredients
500g shrimps cleaned and deveined/ shredded Leftover chicken
2 eggs beaten and salted
2 cups of pre-cooked plain white rice (leftovers are best)
500g of any mixed vegetables of your choice (diced carrots, green beans, red, green and yellow capsicums. mushroom, broccoli)
2-3 tbsp soy sauce
2-3 tbsp oyster sauce
1 tbsp fish sauce
1 bunch of fresh spring onions sliced thinly
Chopped garlic
Salt
Pepper
Paprika powder
Oil for stir frying
Method
In a large wok, heat enough oil to coat all the rice.
Add chopped garlic followed by the beaten egg.

Scramble until the eggs are cooked thoroughly.
Scramble thoroughly
Add shrimps, mix well and cook on high heat.
Add shrimps
When done, add the mixed veggies, mix and cook for a few minutes until slightly softened.
Throw in the mixed veggies or you can used fresh ones if time permits
Pour over the sauces and give it a quick stir.
Pour over sauces
Add the rice, salt, pepper and paprika. Mix thoroughly until the oil, sauces and spices have coated the rice well.
Add precooked rice and stir
Sprinkle with chopped spring onions and voila.
Fried rice ready to serve
You may omit the shrimps/ chicken for the vegetarian version.
