Stir Fried XO Chicken, Celery, Carrot, Zucchini & Mushroom with Roasted Nuts

A healthy balanced dish that contains mixed veggies, some meat and some nuts. It is full of vibrant colors and flavours, yet so freakishly simple to prepare.



Preparation Time: 5 minutes
Cooking Time: 5-6 minutes
Makes: 3-4 servings

Ingredients
2 chicken thighs
6 button mushrooms
2 celery sticks, blanched
1 carrot, blanched
1 yellow skin zucchini
4 garlic cloves, crushed
1 tsp soy sauce
1 tsp chicken powder
1 tsp fresh lemon juice
1/3 cup cashew & macadamia mix, roasted & salted
1 tbsp extra-light olive oil
1/2 tsp sea salt
1 tsp Cantonese XO sauce



Method

Slice chicken thighs into smaller pieces, marinate them with 1 tsp soy sauce, 1 tsp chicken powder, 1 tsp fresh lemon juice in a mixing bowl. Set aside.

Chop zucchini into wedges and button mushrooms into halves, slice celery sticks and carrot.



Heat 1 tbsp oil on a frypan over medium-high heat, add crushed garlic and chicken slices. Saute until golden.



Add carrot slices, stir fry for a minute.



Add celery slices, stir fry for another minute.



Add mushrooms, stir and cook until mushrooms are soft, about 2 minutes.



Add zucchini wedges, 1/2 tsp salt and 1 tsp XO sauce, give a quick stir fry to combine, about a minute.



Remove from heat, transfer to a serving plate.

Sprinkle with roasted cashew & macadamia mix (or your preferred nut mix). Serve hot with steamed rice.
