Stir Fry Fruit Salad

When pineapple is cooked, it becomes all the jucier for a fruit salad.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 3

Ingredients
1 small pineapple
1 apple
1 orange
2 tbsp pumpkin seeds
1 tbsp coconut oil
1 tsp cinnamon
1 tsp thyme

Method
  • Slice the pineapple and apple into cubes.
  • Zest and segment the orange.

  • Fry all the fruit for about five minutes, stirring occasionally.

  • Stir in the pumpkin seeds, zest, cinnamon and thyme and cook for a few more minutes untul the fruit starts to colour.
