When pineapple is cooked, it becomes all the jucier for a fruit salad.

Ingredients
1 small pineapple
1 apple
1 orange
2 tbsp pumpkin seeds
1 tbsp coconut oil
1 tsp cinnamon
1 tsp thyme
Method
Slice the pineapple and apple into cubes.
Zest and segment the orange.
Fry all the fruit for about five minutes, stirring occasionally.
Stir in the pumpkin seeds, zest, cinnamon and thyme and cook for a few more minutes untul the fruit starts to colour.
