Stir Fry Tofu with Broccolini in Sweet Oyster Sauce

Broccolini is highly popular as a spring vegetable, and tonight I am doing a quick stir-fry with firm tofu in a sweet oyster sauce.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

1 packet of firm tofu
1 bunch of fresh broccolini
50g Spring onion
1 clove of garlic
2 spicy sausages (optional)
2 tablespoon sweet oyster sauce
Salt and pepper

Heat oil in a large non-stick pan over medium-high heat.

Shallow pan fry the tofu until crisp and golden on all sides.

Add in the green shallots. Season with salt and pepper. Toss well. Remove and set aside.
Pan fry the sausages until cooked. (Omit if you are a vegetarian).

Add broccolini and garlic to the pan. Spray with oil. Cover and cook for 3 minutes or until tender,stirring occasionally.

Add tofu back into the pan. Add sweet oyster sauce, stirring gently to coat.
Cook for further 3 minutes or until sauce thickens.
Optional: slice the spicy sausages into equal pieces and add on top of tofu & broccolini.
Serve immediately with rice.

This is a tasty healthy dish that you can cook at any time. The sweet oyster sauce is really addictive!
