Stir Fry Vegetables with Egg

For me this is a nice alternative to having meat. I also like to triple the ingredients and serve it in a big bowl in the middle of the table as a serve your self thing when I cook a few dishes.

A simple vegetarian dish for any time

Preparation Time: 5 minutes
Cooking Time: 5-10 minutes
Makes: Serves 1 as a main meal

1/2 a small yellow stone carrot
1/2 a small orange carrot
1/2 cup of cauliflower
1 cup of green beans
2 eggs
4 tablespoons of soy sauce
2 tablespoons of honey
1 teaspoon of minced garlic

  • Add soy sauce, honey and garlic to a bowl and whisk well with a fork to combine.
  • Peel and chop the carrots.
  • Cut up one cup of cauliflower.
  • Bring some water to the boil in a medium sauce pan and cook vegetables for 5 minutes.

  • Cook vegetables for just 5 minutes

  • Turn off vegetables, drain and set aside.
  • Heat a fry pan on high.
  • Add the eggs to a bowl and whisk.
  • Add eggs to the fry pan and allow to cook for approximately one minute.

  • Add eggs to a fry pan and cook for one minute

  • Start to fold the egg to build it up high and make it nice and thick.

  • Fold in the egg to build it up high to make it thick

  • Flip the egg and cook another 1-2 minutes until cooked through.
  • Take egg out of the fry pan and set aside.
  • Turn on a wok or fry pan on and heat on high.
  • Add vegetables to your wok or fry pan and add the honey soy marinade and toss well.
  • Turn heat down to low.
  • Cut egg into strips.

  • Then cut again to make squares.

  • Then cut egg into squares

  • Add egg to the fry pan and toss lightly.
  • Add egg and toss lightly

  • Take off heat and serve immediately.
