Quick, delicious with a zesty spinach and cheese filling and a ham base. This stovetop pie is versatile and easily be made at home or in a caravan or camping if you are travelling. It is can be made vegetarian, gluten and lactose free.
Ingredients 6 slices ham (exclude for vegetarian option)
400g baby spinach
1/4 cup self raising flour (gluten free, if required)
Salt and pepper
1 tbsp lemon zest (optional)
250 g grated cheese (lactose free, if required)
Preheat the stove to high.
Layer a frypan with slices of ham so they overlap to form a base with sides. Place the frypan on the heat.
Make the ham base
Mix the spinach, cheese, lemon zest and season with salt and pepper. Place on the ham base.
Mix the spinach filling and pour on base
Beat the eggs and flour, pour onto the spinach mixture, turn the heat down to medium and put a lid. Cook for 15 minutes or until set.
