Strawberry and Chocolate Parcels

This is an easy dessert that can be whipped up quickly by anyone! It is delicious and will leave everyone impressed. You can use any of your favourite chocolate, white and milk work especially well with the strawberries.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 8 servings

2 sheets of Puff Pastry, thawed
2tbsp Almonds, ground
2tbsp Raw Sugar
250g Strawberries, frozen or fresh
100g vegan chocolate, white or milk

Preheat oven to 200C

To ground almonds, place a handful in a food processor and blend for roughly one minute. You can also use store bought almond meal if you prefer. Mix together the ground almonds and raw sugar.

Cut sheets of pastry into quarters and place a spoonful of the almond and sugar mixture on each separate square.

Top with halved strawberries. Make sure you don't put too many strawberries on each square that you cannot close the corners up.

To make the parcel, take each corner and pinch the sides together, leaving the corners open. It should look like what is pictured below. Brush with some milk.

Place on a baking tray and cook for 20 minutes. In the last five minutes place cubes of chocolate on top of each opening and return to the oven.

Once cooked, allow to cool for 5 minutes. Serve with ice cream (I used So Good Vanilla) and custard (mine is homemade).
