Strawberry And Coconut Yoghurt Icecream
Delicious, easy, machine-free ice-cream uses frozen strawberries to make it quickly and to give a fruity swirl when set. The coconut yoghurt makes it taste creamy but with the yoghurt tang.
It is refined sugar, lactose and gluten free and low FODMAP.

Preparation time: 5 minutes
Cooking time: 1 hour freezing time
Makes: 6 serves
Ingredients
500g frozen strawberries
1 cup [Linkhttp://recipeyum.com.au/easy-homemade-coconut-yoghurt/ coconut yoghurt]
1 tsp vanilla essence
If you prefer a sweeter ice-cream add
1 frozen banana or 1-2 tbsp maple syrup (optional)
Method
Blend 350g strawberries, yoghurt and vanilla essence until just smooth with a stick blender.

Taste and add a sweetener (banana or maple syrup), if desired.
Fill each mould up to the 2/3 mark and push the remaining strawberry pieces into the mixture. Use the stick of the mould to break the pieces into chunks.

Freeze for 1 hour to set. Alternatively serve immediately in a bowl.
Serve.
