Strawberry and Sweet Potato Breakfast
A naturally sweet and healthy breakfast to make a change from a fatty fry up or carb heavy toast. It includes your fruit, veg, and egg all in one.

Makes: 1 servings
Ingredients
1 sweet potato
60g strawberries
1 tsp ground cinnamon
1 tsp coconut oil
1/2 tsp vanilla extract
1 egg
Method
Using a spiraliser, spiraliser the sweet potato, and then coat in cinnamon.
Fry in coconut oil for five minutes, then remove from heat.
Beat the egg with vanilla extract.
Slice the strawberries and stir into the sweet potato with the beaten egg.
Cook the mixture in a toastie or waffle maker for five minutes, before serving.
