Strawberry Jam

This is an easy recipe to make delicious strawberry jam. Make it when strawberries are cheap for an easy addition to the kitchen.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 3-4 jars

Ingredients
1kg strawberries
750g sugar
1 lemon juiced
small knob butter

Method
  • Wash jam jars in hot soapy water then put then in the oven at 100& #730 ;c until you are ready for them.
  • Hull strawberries
  • Put in a large bowl and mash them.

  • Put them in a heavy based saucepan, add sugar and lemon juice.

  • Heat at low heat until sugar is dissolved.
  • Bring to boil. Boil for 10-20 minutes or until a little bit of jam on a cold saucer wrinkles when pushed with the finger.

  • Skim any scum off the top or add knob of butter and stir. Cool a little.
  • Ladle into warm dry jars. Fill to near the top. Secure the lid. Tip upside down to sterilise lid with hot jam.
  • Store jam in fridge or cool dry place.
  • Refrigerate once opened.
