Different from light and fluffy mousse this mousse is thick and creamy and has a subtle sweet marshmallow flavour through it. I could eat this everyday.

Strawberry Mousse top with double cream and strawberries
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 3 servings
Ingredients
For the Mousse
250 g strawberries
25 g raw sugar
100g white mini marshmallows
200 ml double cream
100 ml cup of water
For the Garnish
2 strawberries
9 mini marshmallows
3 teaspoons of double cream
Method
Cut strawberries in half reserving 2 for garnishing.
Add strawberries to a saucepan with water and sugar.

Turn the heat on to medium and cook until sugar has dissolved and the strawberries are soft enough to mash (Approximately 3 minutes).
Take off the heat and squash the berries using a fork until pulpy.
Add in the marshmallows then stir to mixture until the marshmallows dissolve.
Whip cream until it holds shape.
Fold the cream into the cooled strawberry mix.

Mixture should look like this with cream added
Spoon mixture into three small serving bowls or cups and chill for about 2 hours or until set.
To garnish drizzle one teaspoon of cream on each mousse.
Cut the reserved strawberries in quarters and place 2-3 pieces on each.
Finish with three mini marshmallows on each.
