Strawberry Meringue Trifle

Not quite a pavlova, not quite a trifle and almost an Eton Mess, this luscious dessert trumps them all.

Simple to construct, but the jelly is best made the day before, or very early on the serving day to ensure it sets properly. Great to make ahead and finish off just before presenting to eager feasters.



Preparation Time: 30 minutes
Cooking Time: overnight or 4-6 hours setting time
Makes: 12 servings

Ingredients
12 colored meringue twirls (95g)
1 tablspn vanilla extract
500 ml thickened cream, whipped

Jelly
21/2 teaspns gelatine powder
750ml cranberry juice
1/2 cup caster sugar
500g strawberries, halved

Method
  • To make the jelly, place the gelatine and 125ml of the cranberry juice in an bowl and stir to combine.



  • Place the rest of the juice and sugar in a saucepan over medium heat and stir until the sugar is dissolved. Bring to the boil and cook for 1 minute.
  • Remove from heat and stir in gelatine until well combine. Leave to cool for 20 minutes.
  • Arrange the strawberries in the base of a 4 litre bowl and pour over the jelly, leaving 4-6 for decoration.



  • Refrigerate for 4-6 hours or overnight until set.
  • Once set, arrange the meringues over the jelly, leaving two for decoration.



  • Fold the vanilla extract through the whipped cream, and pile most over the meringues. Reserve a small amount for decoration.


  • Use the remaining meringues, strawberries and cream to decorate the top. Chill before serving.
