During the summer my grandpa grows his own strawberries. As he lives by himself, he ends up with far more than he can eat. What does that mean? Free strawberries. Yay. Half go in the freezer to save for trifles the following year, and the other half go in the fridge for us to eat. With so many strawberries, I thought a good way to use them up was to make a mousse. They are lovely and refreshing for the summer, but equally as tasty in the wetter months. Based on the brands I used, each serving is about 130 calories, making for an indulgent, but healthy pudding.

Makes: 4 servings
Ingredients
225g strawberries
3 large eggs
25g Xylitol sweetener (or normal sugar if you prefer)
150g half fat creme fraiche
Method
Take off the strawberry stalks and puree the strawberries in a food processor.
Seperate the eggs and beat the yolks with the sweetener.
Beat the yolks into the strawberry puree over a bowl of hot water.
Whip the creme fraiche and fold into the mixture.
Whip the egg whites, then fold into the mixture.
Pour into 4 glasses and chill in the fridge to set.
