This is my favourite summer salad of all time. Sweet and full of flavour, it’s an amazing side to almost any meal.
Preparation Time: 15 minutes
Makes: 2-4 servings
Ingredients
Salad:
11 oz clamshell of Baby Spinach
1/2 lbs fresh strawberries
1/2 cup unsalted sunflower seeds
1/2 a red onion
Dressing:
1/4 cup of mayo (I use Kraft Calorie-wise as a low-fat option, and it can’t tell the difference)
1 Tbs poppy seeds
2 Tbs granulated sugar
1 Tbs white vinegar
Method
Start with the dressing. In a small bowl, mix the four dressing ingredients until smooth. Keep cool in the fridge for best results.
Rinse and chop strawberries into small bite-sized chunks.
Combine spinach, strawberries, onion and sunflower seeds in a salad bowl
Add cooled dressing, mix and serve.
This is our household’s go to salad to accompany any barbequed beef or chicken. It’s quick and healthy and best of all, it tastes amazing!
