Inspired by the German apple strudel and the British Chelsea bun, I created a fusion between the two in the form of strudel bread. Fruity, buttery, and all around delicious, each slice is about 156 calories.
Preparation Time: 3 hours
Cooking Time: 40 minutes
Makes: 15 servings
Ingredients
500g wholemeal bread flour
300ml water
2 tsp bicarbonate of soda
1 tsp Truvia sweetener (or 1 tbsp caster sugar)
½ tsp salt
2 baking apples
50g sultanas
100g margarine
1 tsp cinnamon
1tbsp soft brown sugar
Method
Pre-heat oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Soak sultanas in boiling water for two hours
Mix the flour, salt, sweetener/sugar, and bicarbonate of soda together.
Melt 50g margarine in a saucepan, then add it to the mixture.
Drain the sultanas and pour the water into the flour to form a dough.
Knead the dough for ten minutes, then roll out with a rolling pin.
Cream 50g margarine with soft brown sugar, and then spread ⅔ over the dough.
Core, peel and chop the apples and scatter ⅔ over the dough.
Scatter the sultanas on top.
Roll up the dough tightly into a sausage shape.
Spread the remaining margarine over the top and stick on the remaining pieces of apple.
Dust with cinnamon and bake in the oven.
