Stuffed Aubergines

Aubergines have always been a headache for me to cook since my kids and hubby never liked their bitter taste. After trying a few recipes, I have come across this one which is not only easy to prepare but also so yummy to relish that you will have your kids asking for more.

Preparation Time: 20 minutes
Cooking Time: a little more than 1 hr
Makes: 4 servings


2 long aubergines
1 potato
1 onion sliced thinly
2 tbsp tomato purée
1/2 cup cream
100 g grated cheddar cheese


Wash aubergines thoroughly, slice lengthwise and coat with olive oil.

Prepare aubergines before grilling

Place on a baking tray and grill for 25-30 mins in hot oven at 180C.
When done, turn off the oven and leave aubergines to stand for 1 hour inside the oven.

Do not be frightened by it's color. The burnt layer can be skimmed off. The aubergines have to be grilled for a long time to be able to remove the flesh easily without breaking it's skin

Meanwhile, wash potato and cut into small cubes.
When aubergines have cooled down, empty the aubergines and keep the skins to one side.

Empty aubergine skins carefully without tearing

Gently mash the flesh, add diced onion, tomato purée and potato cubes and cook on a low heat until potatoes have soften.

Cook the stuffings

Mix in 1/2 cup of cream and add salt to taste.

Spoon the mixture into the aubergines skins.

Spoon mixture inside casing

Sprinkle with breadcrumbs and grated cheese.

Bake for a further 15 minutes.
Serve hot accompanied with a salad.
