Stuffed Butternut Squash
Make a change from stuffed peppers and mushrooms and stuff a squash instead.
You won't need all of the squash for this recipe, so you can use what is leftover to make
soup or a
butternut squash and sweet potato crumble .
Preparation Time: 25 minutes
Cooking Time: 32 minutes
Makes: 1 serving
Ingredients
1 butternut squash
3 cherry tomatoes
30g cheddar cheese
1 tbsp green chillies in olive oil
Ground black pepper to taste
Method
Peel the butternut squash and chop it at the point where shape turns bulbous.
Scoop out the seeds and pulp.
Toast the seeds for about two minutes under the grill, or until they have started to brown.
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375& #3872 ;F/5 Gas.
Fill the hollow with the chillies.
Slices the tomatoes into quarters and press inside.
Thinly slice or grate the cheese and sprinkle on top.
Bake in the oven for half an hour.
Sprinkle a few of the toasted seeds on top and season with pepper.
