Stuffed Butternut Squash

Make a change from stuffed peppers and mushrooms and stuff a squash instead.

You won't need all of the squash for this recipe, so you can use what is leftover to make soup or a butternut squash and sweet potato crumble .

Preparation Time: 25 minutes
Cooking Time: 32 minutes
Makes: 1 serving

Ingredients
1 butternut squash
3 cherry tomatoes
30g cheddar cheese
1 tbsp green chillies in olive oil
Ground black pepper to taste

Method
  • Peel the butternut squash and chop it at the point where shape turns bulbous.



  • Scoop out the seeds and pulp.



  • Toast the seeds for about two minutes under the grill, or until they have started to brown.
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375& #3872 ;F/5 Gas.



  • Fill the hollow with the chillies.
  • Slices the tomatoes into quarters and press inside.



  • Thinly slice or grate the cheese and sprinkle on top.

  • Bake in the oven for half an hour.



  • Sprinkle a few of the toasted seeds on top and season with pepper.
