Stuffed Mushrooms

Delicious couscous filled mushrooms.

Preparation Time: 25 minutes
Cooking Time: 15 minutes
Makes: 8 servings

Ingredients
8 large flat or portobello mushrooms
½ onion
2 tomatoes
80g coucous
1 tsp ground parsley
2 tbsp coconut oil
80g feta cheese
200ml vegetable stock

Method



  • Remove stalks from the mushrooms and fry batches with 1 tablespoon coconut oil for a few minutes until coloured.



  • Slice the tomatoes into eight discs and then fry with 1 tsp coconut oil.
  • Place one tomato slice on each mushroom.



  • Chop and fry the onion in the remaining coconut oil, then place on top of the mushrooms.



  • Stir the couches into hot vegetable stock and allow to soak for ten minutes until soft.



  • Stir in the parsley and then spoon the couches over the mushrooms.



  • Slice the feta into cubes or crumble it over the mushrooms.
