Stuffed Okra

Okra is a versatile vegetable which can be cooked in many ways. One of the exotic side dish which may be prepared using it is the . It has a combination of a tangy and spicy flavor and is very likely to stimulate the taste buds of all. It is a great combination with chapattis or with steamed rice.

Cooking Time: 30 minutes
Makes: 3-4 servings

Ingredients
200 grams okra

1 chopped onion
2 florets of garlic
½ tsp grated ginger

1 tsp fennel seeds
½ tsp cumin seeds
½ tsp onion seeds
½ tsp mustard seeds
½ tsp sesame seeds

Ingredients for filling
1 tsp red chilli powder
2 tsp coriander powder
1 tsp dry mango powder
¼ tsp turmeric powder
1 tsp cumin powder
2 tsp oil
Salt to taste

Method

Method of stuffing Okra
  • Take a bowl and mix red chilli powder, coriander powder, dry mango powder, turmeric powder and cumin powder.

  • Wash the okras under running water and slit it lengthwise through half way.

  • Open the slit of the okra with the help of fingers and add 1 spoon of stuffing prepared above. Spread it evenly through the okra.

  • Place a pan on gentle flame and dry roast the onion, chopped garlic and grated ginger till it turns golden brown in color.

  • Add fennel seeds, cumin seeds, onion seeds, mustard seeds and sesame seeds to it. Mix all the ingredients properly and let it cook for some time. You shall now feel a nice aroma coming from the ingredients.

  • Place the stuffed okras on it. Also transfer the remaining stuffing material and mix it gently with the okra and sauté it for 3-4 minutes. Close the lid and let it cook for 8-10 minutes.

  • Turn off the flame, transfer the dish to the serving plate and garnish it with coriander and serve it hot as a side dish with rice or chapattis.
