Okra is a versatile vegetable which can be cooked in many ways. One of the exotic side dish which may be prepared using it is the Stuffed Okra. It has a combination of a tangy and spicy flavor and is very likely to stimulate the taste buds of all. It is a great combination with chapattis or with steamed rice.
1 chopped onion
2 florets of garlic
½ tsp grated ginger
1 tsp fennel seeds
½ tsp cumin seeds
½ tsp onion seeds
½ tsp mustard seeds
½ tsp sesame seeds
Ingredients for filling 1 tsp red chilli powder
2 tsp coriander powder
1 tsp dry mango powder
¼ tsp turmeric powder
1 tsp cumin powder
2 tsp oil
Salt to taste
Method of stuffing Okra
Take a bowl and mix red chilli powder, coriander powder, dry mango powder, turmeric powder and cumin powder.
Wash the okras under running water and slit it lengthwise through half way.
Open the slit of the okra with the help of fingers and add 1 spoon of stuffing prepared above. Spread it evenly through the okra.
.Preparation of dry gravy
Place a pan on gentle flame and dry roast the onion, chopped garlic and grated ginger till it turns golden brown in color.
Add fennel seeds, cumin seeds, onion seeds, mustard seeds and sesame seeds to it. Mix all the ingredients properly and let it cook for some time. You shall now feel a nice aroma coming from the ingredients.
Place the stuffed okras on it. Also transfer the remaining stuffing material and mix it gently with the okra and sauté it for 3-4 minutes. Close the lid and let it cook for 8-10 minutes.
Turn off the flame, transfer the dish to the serving plate and garnish it with coriander and serve it hot as a side dish with rice or chapattis.
