Stuffed peppers always look like you have gone to an extra special effort when preparing a meal for family or guests, but they are in fact really easy to make. Their slightly blackened, caramelised appearance not only makes them look very tempting, but taste delicious too. They are full of indulgent-tasting sweet and savoury flavours but are actually very healthy and make for a great starter or side dish.

Makes: 8 servings
Ingredients
8 capsicum peppers (whichever colour you prefer)
1 brown onion
250g mixed mushrooms
1 x 400g tinned flageolet beans (drained, 265g)
1 x 285g jar of halkidiki olives in olive oil (drained, 160g)
100g cheddar cheese
Method
Finely chop the onion and mushrooms, and fry in a little of the olive oil from the drained olive jar.
Finely chop the olives and stir them into the onions and mushrooms, along with the flageolet beans.
Pre-heat the oven to 180 ༠C/160 ༠C/375 ༠F/5 Gas.
Chop the heads off the peppers and scoop out the seeded core.
Stuff the peppers with the filling.
Grate the cheese and sprinkle on top.
Bake in the oven for an hour.
