Stuffed Tofu Puffs with Meat Calamari Filling in Blueberry Sauce

Turning usual tofu puff into unusual delicious bite-sized treats is just so simple. You can prepare more and get the kids involved in the filling process, they will enjoy both the process and the result.



Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 8 servings

Ingredients
1 packet tofu puffs

Filling
130g pork/chicken mince
1/2 cup diced raw calamari rings, pat dry
1 tbsp oyster sauce
1 tsp soy sauce
1/2 tsp sugar
1/2 tsp chicken powder
1 tsp corn starch
1/8 tsp black/white pepper ground
1/4 tsp sesame oil
1 egg white

Blueberry sauce
1 cup blueberry, fresh or frozen
1 tbsp raw sugar

olive oil cooking spray

Method
  • In a mixing bowl, add pork/chicken mince, diced calamari, oyster sauce, soy sauce, sugar, chicken powder, corn starch, pepper ground, sesame oil and egg white.

  • Stir and mix well to form a sticky mixture.



  • Chop tofu puffs to into halves. Use a finger to press inside gently in order to make a bigger hollow.



  • Use a spoon to fill the hollow with meat & calamari mixture, and press the top gently to make the stuffed puff firmer.

  • Put into the freezer if they cannot be consumed at a time.



  • Spray cooking oil in a non-stick frypan over medium heat as well as the top of all stuffed tofu puff.

  • Once the pan begins to have smoke, turn to low heat.

  • Place the stuffed puffs gently onto the pan, with filling side facing down, one by one. Make it in two batches if the pan is not large enough.



  • Press with a spatula/spoon to flatten the puff slightly. Pan fry for 3-5 minutes, depends on the thickness of the tofu puff.

  • Flip to another side. Pan fry for 2 minutes. Remove from heat.



  • Meanwhile, prepare the blueberry sauce. Heat a saucepan over low heat, pour into blueberry and raw sugar. Stir and mash into puree, add a bit water if it is too thick.



  • Transfer and divide the puffs between serving plates.



  • Topped with blueberry sauce.

  • Serve immediately.
