Stuffed Tomato Platter
If you are hosting a dinner party or an informal buffet, then you will probably have a lot of cooking to do. That's why it is all the better to make things that are quick and simple, but look attractive too.
Parties also tend to involve a fair amount of indulgent and unhealthy food, so why not make up for it with a health starter, like this stuffed tomato platter.
Preparation Time: 30 minutes
Cooking Time: 15 minutes
Makes: 4-8 servings
Ingredients
8 tomatoes
1 tin of tuna in spring water (150g drained)
5 tbsp cream cheese
½ lemon
3 drops tabasco sauce
1 tsp dried parsley
2 tsp dried rosemary
½ tsp mixed herbs
2 tbsp butter
A portion of new potatoes
A portion of king prawns
Two handfuls of spinach
Method
Boil the potatoes for about fifteen minutes (or until you can stab a knife through them) and then drain.
Stir in the butter and rosemary, and allow the potatoes to go cold.
Slice the tops off the tomatoes and scoop out the fillings.
Mix together the tuna, cream cheese, and tabasco sauce, then squeeze over the juice from the lemon.
Divide the mixture equally to stuff each tomato.
garnish each tomato with a sprinkle of parsley.
Put the tops back on the tomatoes.
Lay a bed of spinach on a long oval plate, and place the tomatoes on top.
Arrange as many potatoes as you need to place around the tomatoes.
Coat the prawns with the leftover butter melted from the potatoes, and stir in the mixed herbs.
Arrange a handful of prawns over the top of the potatoes and tomatoes.
