SugarFree Polenta Oatmeal
While oatmeal is a healthy breakfast, adding other grains to it can improve its nutritional quality. Polenta not only increases the protein content of your morning oatmeal but also gives it a smoother consistency and added flavour.
This dish uses the intense caramel sweetness of dates in place of sugar, and the garnish of sultanas also adds further sweetness.
This dish is further complemented by the addition of cinnamon that has its own inherent sweetness, but you can also use pumpkin spice mix, ground cardamom or a little vanilla powder to make your breakfast even more enticing.

Serves: 2
Ingredients
1/2 cup of oats
1/4 cup fine polenta
1 1/2 cups of water
1/4 cup of soy milk
1 tablespoon of desiccated coconut
1/8 teaspoon of cinnamon
7 chopped dates
Sultanas to garnish
Method
Put the water, oats and polenta into a saucepan and begin cooking on low heat, stirring continuously.
When the mixture begins to thicken add the soy milk, dates, cinnamon and desiccated coconut.
Continue to stir to incorporate all the ingredients and cook until oatmeal is bubbling.
Add a little extra water or milk to reach a consistency you like.
Garnish with sultanas and serve immediately.
