Sultana Hot Cross Buns

My family love hot cross buns, but we're not a fan of peel which is often in store bought buns. We make our own buns with sultanas and no peel. I truly believe home made buns are much tastier than store bought ones.


Preparation Time: 15 minutes plus 90 minutes rising time
Cooking Time: 20 minutes
Makes: 18

Ingredients
4 cups plain flour
2 1/4 tsp dried yeast
350 ml milk
1 egg, whisked
2 tbs oil
2 tbs sugar
1 tsp salt
1 tbs mixed spice
1 tbs ground cinnamon
1 cup sultanas

For the crosses
1/4 cup plain flour
2 tbs water

Method
  • Add the flour, yeast, sugar, salt, mixed spice, sultanas and cinnamon to a bowl, stir to combine.
  • Add the milk, egg and oil and stir until a dough forms.
  • Place dough on a floured surface and knead for 10 minutes until dough is smooth and elastic. Place in a bowl, cover and let rise for 60 minutes or until doubled in size.
  • Punch dough down and divide it into 18 pieces. Shape them into little rounds and place them close together on a baking tray. Cover and let rise for 30 minutes or until doubled in size.

  • Preheat oven to 190C.
  • Mix together the flour and water for the crosses until a paste is formed. Place the paste in a piping bag and pipe a cross onto each bun.

  • Bake for 15-20 minutes or until golden.
  • Transfer buns to a wire rack to cool.
  • Best served warm with large quantities of butter.
