Sultana Tea Loaf

This tea infused sultana loaf is the perfect morning or afternoon tea treat to have with a cup of tea. I like mine served sliced with a generous serve of butter.


Preparation Time: 50 minutes
Cooking Time: 70 minutes
Serves: 10

Ingredients
2 black tea bags
1 cup boiling water
2 cups sultanas
125g butter, melted
3/4 cup caster sugar
2 eggs, lightly beaten
1/4 cup milk
3/4 cup plain flour
3/4 cup SR flour

Method
  • Boil water and pour into a heatproof jug. Add the teabags and stand for 5 minutes. Remove the tea bags and add the sultanas to the tea. Let stand for 30 minutes.

  • Preheat oven to 180C and grease and line a loaf pan.
  • Place the sultanas, butter, sugar, eggs, milk and flours in a bowl and stir to combine.

  • Pour the mixture into your loaf pan and bake for 1 hour and 10 minutes or until a skewer comes out cleanly.

  • Rest in pan for 5 minutes before transferring to a wire rack to cool completely.
  • Serve with butter
