Summer Fruits Eton Mess

Eton Mess is a traditional British dessert usually made with strawberries. However, it's delicious with any kind of fruit - you could also try a tropical version with passion fruit, pineapple, and papaya.

Preparation Time: 15 minutes
Cooking Time: None
Makes: 6 servings

500g summer fruits (strawberries, raspberries, redcurrants, blackberries)
2 tsp caster sugar (or sugar substitue)
500 ml whipping cream
1 box of small meringues (about 28 little meringues - you could replace with 6 larger meringue nests)

Whip the sugar and cream until it forms soft peaks. It should be stiff enough to hold the peaks.

Crush the meringues - there should be some large chunks and some fine dust.

Gently fold the meringue into the cream.

Summer Fruits Eton Mess

Spoon the cream and meringue into individual bowls and top with the summer fruits.

Variations: Combine the fruit with the cream, serve in a sundae dish, and drizzle with some reserved fruit juice from the frozen fruit.
