Summer Fruits Puff Pastry Pies

This is a simple and delicious pie that you can make with fresh fruit in the summer, or with frozen fruit at any time of the year. Most large supermarkets will sell bags of frozen summer fruits. I always keep a bag in the freezer as they are a good standby item. I've made these in four individual ramekins, but you could also make them in a single pie dish. In which case, you might need a bit more pastry.



Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings



Ingredients
4 individual ramekin dishes
20g butter
240g frozen summer fruits
60g caster sugar or sugar subsitute (about 4 tbsp)
100g ready-roll puff pastry (or make your own)
2 tbsp milk (to brush the pastry)

Method
  • Preheat the oven to 180 Celsius
  • Grease the inside of the ramekins with a small amount of butter or oil.
  • Split the frozen summer fruits equally between the ramekin dishes.
  • Sprinkle a tablespoon of sugar over each ramekin filled with summer fruits.



  • If you have a spare ramekins, then use this to cut out your pastry circles. Otherwise, do it the old-fashioned way, by draping it over the ramekin and trimming with a knife.



  • Brush the pastry with milk (or beaten egg).



  • Make a whole in the middle of each pie to let steam escape from under the crust.
  • Bake in the oven for 20-30 minutes, or until the pastry is risen and golden.



  • Serve with thick cream or custard.
