Summer Rainbow Salad
This salad is fresh, wholesome, bright, delicious and unbelievably good for you! Bursting with a range of nutrients and delicious flavours, it is undoubtedly a crowd pleaser. Easy to prepare and stores well. I either serve this as a main and add chickpeas for a vegetarian meal, or served as a side for chicken/fish. Would be delish to add some nuts/seeds for another boost of nutrients.

Makes: 7-8 servings as main salad, 12 as a side
Ingredients
3 large beetroots
2 large carrots
1/2 white cabbage
1 bunch spring onions
1 cup cooked quinoa
1/4 bunch parsley
1/4 cup Australian feta
1 serving
life changing salad dressing
Method
grate beetroots and carrots (I used a julienne slicer but grating will still work!)
slice cabbage thinly
chop parsley
combine in large bowl
add cooked quinoa and toss to combine

serve on bed of baby spinach and crumble some feta on top
