Summer Roast Chicken and Vegetables

I call this dish 'Summer' chicken because it's much lighter than a roast meal you might have during the Winter Holidays. Plus the brightly coloured vegetables brighten up the meal.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Ingredients
6 Boneless Chicken Thighs
Mixed Spice
Black Pepper
Olive Oil
3 Garlic Cloves
8 Carrots
Broccoli
1 Large Sweet Potato

Method
  • Prick a large sweet potato and place in the oven for 45 minutes at 200 degrees/gas mark 4.

  • Place the chicken in a baking tray and add all of the seasoning and a splash of olive oil.



  • Chop the garlic cloves.

  • Rub the seasoning all over the chicken and add the chopped garlic.



  • Top and tail the carrots and chop the end off the broccoli and pull off 6 florets (three each).



  • Peel the carrots.



  • Place carrots in saucepan of boiling water for 10 minutes.



  • Remove carrots from the saucepan and place in the baking tray with the chicken.

  • Add a few knobs of butter and place the baking tray back in the oven for 15 minutes.



  • Place the broccoli in the same saucepan the carrots were in and boil for 10 minutes.



  • Remove the sweet potato from the oven and slice in half.



  • Remove the baking tray from the oven and serve with equal amounts of vegetables and potato per person.
