Summer Slaw with Tahini
A quick and easy, three ingredient salad, this colourful cabbage, carrot and cucumber will occupy centre stage at any BBQ, picnic or dinner party. Dazzle your family and friends as they fall in love with the flavours of this non-traditional slaw salad.

Ingredients
½ Head Red Cabbage Chopped
1 Large Grated Carrot
1 Medium Sized Grated Cucumber
3 Tablespoons Diced Mint
3 Tablespoons Pepitas
3 Tablespoons Sultanas
Tahini Sauce
3 Tablespoons Unhulled Tahini
2 Tablespoons Rice Malt Syrup
1 Tablespoon Lemon Juice
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Extra Virgin Olive Oil
Salt and Pepper to taste
Method
In a large bowl combine the chopped cabbage, grated carrot and cucumber, mint, pepitas and sultanas.
Combine cabbage, carrot and cucumber to make this Summer Slaw.
In a small bowl combine the tahini, rice malt syrup, lemon juice, apple cider vinegar and extra virgin olive oil and mix until smooth.
The Tahini Sauce works as a combining agent with the wet ingredients of cabbage, carrot and cucumber.
Drizzle the tahini sauce over the Summer Slaw and mix until the salad is evenly coated. Cover and refrigerate until required.
Notes
As the cucumber is high in water content, once grated, you will need to squeeze the excess water prior to adding to the Slaw Salad.
The measurements for the Tahini Sauce will produce a relatively thick sauce. As the cabbage, carrot and cucumber are wet ingredients, the thickened sauce will help act as a combining agent.
