Sun Dried Tomato and Green Bean Salad

This is a colorful and very tasty vegetarian salad. I find the freshness of the green beans and basil is balanced by the saltiness of the feta and sun dried tomatoes. It is quick and easy to prepare, and may come in handy for catering to last minute guests or if you're in a rush to get out the door.

Sun Dried Tomato and Bean Salad

Preparation Time: 15 minutes
Cooking Time: 2 minutes
Makes: 6-8 servings

1/2 cup green beans
1/2 cup sun dried tomatoes
1/2 cup cubed feta cheese
1 handful basil leaves

Ingredients all lined up

1 tablespoon Extra Virgin Olive Oil
1 tablespoon apple cider vinegar
1 teaspoon fresh lemon juice
rock salt
freshly cracked black pepper

Cut the "Top and tail" off the green beans.

Top and Tail the green beans

Blanch the green beans slightly (2 minutes) in a saucepan of boiling water. This will enhance their green color and make them less crunchy, although you could leave them completely raw if you prefer.

Add sun dried tomatoes and feta cheese.

Mix the dressing ingredients. Shake well.

Drizzle your Sun Dried Tomato and Green Bean Salad with the dressing mix and serve with dinner, at a barbecue or your next social gathering.
