Sun Dried Tomato Pesto

This has the texture of traditional pesto but that's where the similarities end. This is a delicious quick recipe which is lovely as a cold or hot pasta dish.

Sundried Tomato Pesto.


Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 5 servings

Ingredients
300g of sun-dried tomatoes
1/2 cup roasted unsalted cashews
4 cloves or garlic
1 bunch or parsley
1 cup or grated Parmesan
500g raw pasta

Ingredients.


Method
  • Grate the Parmesan and add to a large bowl.

  • Pick the parsley leaves off the stems and add to the bowl.

  • Blend in a Bowl.


  • Add the remaining ingredients including the oil the tomatoes are in and blend with a hand blender or food processor until the mix is chunky.

  • You Want it Chunky


  • Bring a pot of water to the boil and cook your pasta.

  • Drain your pasta and return to the pot.

  • Add your chunky tomato pesto and mix until combined.

  • Made with Orecchiette.


  • Serve hot with some garlic bread and a glass of red wine.

  • Devoured with a Merlot.


    This is lovely cold for lunch the next day with some avocado tossed through.
